Pasta with Green Asparagus and Tomatoes

Ingredients
- 400 g green asparagus
- 1 clove garlic
- 500 g plum tomatoes
- 400 g Whole wheat penne
- Salt
- 2 tbsp olive oil
- a pinch of chili flakes
- 100 ml Vegetable broth
- 80 g Arugula (1 bunch)
- Pepper
Instructions

Wash the asparagus, peel the lower third, and cut off the woody ends. Cut the asparagus into approximately 3 cm long pieces.

Peel and finely chop the garlic. Clean and wash the tomatoes and cut them into large pieces.

Cook the whole wheat penne al dente in boiling salted water according to package instructions.

Meanwhile, heat the oil in a pan. Sauté the garlic, asparagus, and chili over high heat for 2 minutes. Pour in the broth, add the tomatoes, and simmer covered over low heat for 4-5 minutes.

While the vegetables are simmering, wash, shake dry, and optionally tear the arugula into smaller pieces.

Drain the pasta and mix it with the asparagus mixture. Season with salt and pepper.
