Ingredients

  • 250 g thin rice noodles
  • 3 cloves garlic
  • 1 onion
  • 250 g shrimp (pre‑cooked)
  • 250 g Chicken breast fillet
  • 1 red chili pepper
  • 3 Tbsp plant oil
  • 150 ml Vegetable broth
  • 3 Tbsp oyster sauce
  • 2 tbsp Soy sauce
  • Salt
  • Pepper
  • 2 spring onions (with green part)
  • 1 Lime

Instructions

    Cook noodles according to package instructions, drain and rinse with cold water, then set aside. Peel and finely chop onion and garlic. Wash the chili, halve it, remove seeds, and finely chop. Rinse and pat dry chicken breast, cut into strips. Rinse and pat dry shrimp. Trim and thinly slice spring onions. Cut lime into wedges.

    Heat oil in a wok, sear the meat, then remove from the wok and season with salt. In the remaining oil sauté chili, onion and garlic; add shrimp, cook briefly, then pour in broth and simmer for 2 minutes. Add noodles and chicken, mix everything with oyster sauce, soy sauce, salt and pepper to taste. Sprinkle spring onions on top and garnish with lime wedges. (You can squeeze fresh lime over the dish right before serving).
