Ingredients

  • 400 g Tagliatelle (or wide ribbon pasta)
  • 150 g Brussels sprouts
  • 50 g bacon
  • 1 tsp clarified butter
  • 1 onion
  • 125 ml Vegetable broth
  • 125 ml heavy cream
  • Salt
  • freshly ground pepper
  • nutmeg

Instructions

    Cook the pasta in plenty of boiling salted water until al dente, drain, rinse with cold water and set aside.

    Clean, wash, and quarter the Brussels sprouts.

    Slice the bacon into thin strips.

    Peel the onion and cut it into fine slivers.

    Render the bacon in hot clarified butter, then remove the bacon and set aside. Add the onions to the fat, sauté until translucent, then add the Brussels sprouts and cook briefly. Pour in the broth and cream, simmer gently for about 10 minutes. Season with salt, pepper, and nutmeg.
