Pasta with Asparagus, Salsiccia and Tomatoes

Ingredients
- 400 g penne
- Salt
- 500 g Green Asparagus
- 1 Garlic clove
- 2 tbsp olive oil
- 300 g salsiccia
- 150 ml dry white wine
- 100 g cherry tomatoes
- 2 handfuls mixed herbs (basil and parsley)
- 80 g grated parmesan
- Pepper

Cook the penne in salted water until al dente.

While the pasta cooks, peel the lower third of the asparagus and cut the spears into 4-5 cm pieces. Peel and finely chop the garlic. Sauté the asparagus with the garlic in hot oil for a short time. Add the salsiccia, press it into the pan, and brown it crumblily for about 5 minutes. Deglaze with wine and cover to steam for another 5 minutes.

Wash and quarter the tomatoes. Rinse the herbs, shake dry, pluck, and roughly chop them. Combine the tomatoes, half of the Parmesan, and the drained pasta in a pan. Season with salt and pepper and toss well.

Sprinkle the remaining Parmesan over the dish before serving.
