Ingredients

  • 250 g green asparagus (the lower third peeled, ends trimmed and cut into large pieces)
  • 6 tbsp Olive oil
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • Salt
  • black pepper (freshly ground)
  • 200 g tagliolini
  • 200 g salmon fillet (skinless)

Instructions

    Cook the asparagus in boiling salted water for about 8 minutes, then drain.

    Cook the tagliolini according to package instructions until al dente, then drain.

    Slice the salmon into strips.

    Heat the oil in a large pan, quickly toss the asparagus, season with salt, pepper and lemon juice, add lemon zest and mix in the tagliolini, warm through, then fold in the salmon strips and serve on plates.
