Pasta Salad with Cherry Tomatoes and Mushrooms

Ingredients

  • 250 g Penne
  • 250 g mushrooms of choice (button, oyster... )
  • 1 Shallot
  • 2 Garlic cloves
  • 0.5 bunch arugula
  • 100 g cherry tomatoes
  • Salt
  • ground pepper
  • 1 tbsp butter
  • 3 tbsp red wine vinegar
  • 5 tbsp olive oil
  • 3 tbsp orange juice
  • 0.5 tsp mustard
  • Salt
  • ground pepper

Instructions

    Cook the pasta in boiling salted water until al dente, drain, rinse with cold water and let it dry.

    Clean the mushrooms and slice them thinly.

  3. 3.

    Peel and finely chop the shallot and garlic; sauté them in hot butter until translucent, add the mushrooms and cook briefly, season with salt and pepper, then remove from heat.

    Wash, clean, and trim the arugula, discarding tough stems and drying it thoroughly.

    Wash the tomatoes and halve them.

  6. 6.

    Whisk together vinegar, orange juice, mustard, salt and pepper; slowly whisk in the oil, taste and adjust seasoning. Combine with the prepared salad ingredients and serve.
