Pasta ham salad with arugula and tomatoes from Spoonsparrow is always wonderfully good.

Ingredients

  • 400 g short tube pasta (e.g., Sedanini)
  • Salt
  • 250 g arugula
  • 200 g Cherry tomatoes
  • 150 g turkey ham (sliced)
  • 4 tbsp white balsamic vinegar
  • 1 tbsp Lemon Juice
  • 4 tbsp olive oil
  • Pepper

Instructions

    Cook the pasta in boiling salted water according to package instructions until al dente. Drain, rinse with cold water, and let it drain well.

    Wash and trim the arugula, tearing into bite‑sized pieces if desired. Wash and halve the tomatoes. Slice the ham into strips.

    Whisk together the balsamic vinegar, lemon juice, 2–3 tbsp water, and olive oil. Season with salt and pepper, then toss all salad ingredients together.
