Ingredients

  • 400 g macaroni
  • Salt
  • 1 zucchini (about 250 g)
  • olive oil
  • Pepper (freshly ground)
  • 400 g smoked salmon (whole piece)
  • 60 g white onions
  • 300 ml whipping cream
  • 200 g Cream cheese
  • 3 tbsp horseradish (jarred or freshly grated)
  • 2 tbsp fresh chopped herbs (parsley, chives, lemon balm)
  • 2 Eggs
  • 100 g freshly grated Gruyère cheese

Instructions

    Preheat the oven to 200°C (400°F).

    Cook the pasta in plenty of boiling salted water until al dente, drain, rinse with cold water and set aside. Wash, peel and slice or shave the zucchini into thin rounds. Sauté in one tablespoon of oil for a short time, season with salt and pepper. Cut the salmon into about 1 cm cubes.

    Peel the onion, finely dice it and sauté in hot oil in a saucepan until translucent. Add the cream, then the cream cheese and stir until melted. Season with horseradish, salt, pepper and herbs. Remove from heat, let cool slightly and whisk in the eggs. Combine the pasta with the sauce, zucchini and salmon. Transfer to a greased baking dish, sprinkle with Gruyère cheese and bake for 20–25 minutes until golden.
