Ingredients

  • 400 g Broccoli
  • Salt
  • 400 g Whole wheat penne
  • Pepper
  • nutmeg
  • 100 ml milk (3.5% fat)
  • 100 g Sour cream
  • 2 Eggs
  • 100 g Emmental cheese (1 piece)
  • paprika powder
  • 30 g Parmesan cheese (1 piece)

Instructions

  1. 1.

Clean and wash the broccoli, then cut into small florets. Blanch the florets in boiling salted water for 3 minutes, drain and shock with cold water.

  2. 2.

Cook the pasta according to package instructions in plenty of boiling salted water until al dente, then drain and let it drip dry.

  3. 3.

Mix the broccoli with the penne. Season with pepper and freshly grated nutmeg, and transfer to a baking dish (about 25 cm diameter). Whisk together milk, sour cream, and eggs.

  4. 4.

Grate cheese and fold half into the milk mixture. Season heavily with salt, pepper, and paprika powder. Pour the milk mixture over the pasta and broccoli. Grate Parmesan, mix it with the remaining cheese, and sprinkle on top. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for 30–35 minutes until golden brown. Remove from the oven and serve immediately.
