Passionfruit Waffles

The passionfruit waffles from Spoonsparrow are perfect for all fans of exotic flavors. A great clean baking treat!

Ingredients

  • 200 g spelt whole‑grain flour
  • 10 g baking powder (1 tbsp)
  • a pinch salt
  • 60 g softened butter (4 tbsp)
  • 150 ml Milk (3.5% fat)
  • 100 g unsweetened applesauce
  • 45 g honey (3 tbsp)
  • 4 eggs
  • 100 g yogurt (1.5% fat)
  • 0.5 Vanilla bean
  • 250 g quark (20% fat in the tub)
  • 3 passionfruits
  • 30 g pistachio nuts (2 tbsp)

Instructions

    Mix flour, baking powder and a pinch of salt for the waffles. Whisk 1 tbsp butter, milk, applesauce, honey and eggs until creamy. Stir the dry mixture into the wet mixture. Let the batter rest for about 20 minutes.

    Meanwhile split the vanilla bean lengthwise and scrape out the seeds. Blend yogurt with vanilla seeds and quark until smooth. Halve the passionfruits and scrape out the pulp and seeds. Chop the pistachio nuts.

    Preheat a waffle iron and brush it lightly with butter. Pour 2–3 tbsp of batter onto each waffle and cook for about 3 minutes until golden‑yellow. Keep finished waffles warm in a preheated oven at 80 °C (fan) if desired. Bake a total of 8 waffles.

    Drizzle the waffles with quark, spread passionfruit pulp on top and sprinkle chopped pistachios over them.
