Ingredients

  • 500 g pork sausage (or meat loaf)
  • 1 yellow bell pepper
  • 1 tsp chopped parsley (or chives)
  • 6 large iceberg lettuce leaves (for serving)
  • 0.5 bunch radishes
  • parsley (for garnish)
  • 2 tbsp white wine vinegar
  • 2 tbsp lemon juice
  • Salt
  • sugar
  • Pepper
  • 0.5 tsp mustard
  • 1 Shallot

Instructions

    Wash, trim and dice the bell pepper into small cubes. Wash, trim and slice or shave the radishes thinly. Peel the sausage and cut into 1-2 cm cubes. Peel and finely chop the shallot. Whisk vinegar, lemon juice, salt, sugar, mustard, pepper with 50 ml water to make a dressing and taste.

    Combine shallots, sausage, radishes and bell pepper; fold in chopped parsley; cover and refrigerate for 1 hour. Wash lettuce leaves, dry, tear or cut into large pieces. Arrange on plates. Top with the sausage salad and garnish with parsley as desired.
