Paprika Goulash with Pork

Ingredients
- 1 red bell pepper
- 1 yellow bell pepper
- 1 large green bell pepper
- 1 green pepperoni
- 2 Tomatoes
- 400 g pork tenderloin
- 4 tbsp Vegetable oil
- 1 vegetable onion
- 3 Garlic cloves
- 0.25 l vegetable broth (from the jar)
- salt (pepper)

Halve the peppers, remove seeds and membranes, wash, and cut flesh into strips. Peel and finely chop the onion and garlic; sauté in half the oil. Add pepper strips and cook briefly, then pour in vegetable broth, cover, and simmer over medium heat for 10 minutes. Wash pork, pat dry, cube it. Heat remaining oil in a pan and sear pork cubes until browned on all sides; remove from pan.

Wash pepperoni and slice into thin rings. Boil tomatoes briefly, cool, peel skins off, and roughly dice flesh. Add both to the pepper mixture and simmer for another 5 minutes. Return pork to pot, heat through, and season with salt and pepper.
