Ingredients

  • 60 g Butter
  • 2 tbsp Orange juice
  • 250 g flour
  • 150 g Sour cream
  • a pinch of salt
  • 1 tbsp sugar
  • 2 tsp Baking powder
  • 0.375 l buttermilk
  • 1 egg
  • sunflower oil (for frying)
  • butter
  • maple syrup

Instructions

    Melt the butter in a pot.

    Whisk 100 g sour cream with 2 tbsp orange juice until smooth.

  3. 3.

    Combine flour, salt, sugar and baking powder in a mixing bowl.

  4. 4.

    Beat buttermilk and egg with a whisk.

  5. 5.

    Pour 2 tbsp liquid butter and the egg-buttermilk mixture into the dry mix.

    Whisk quickly to form a smooth batter.

    Heat 2 tsp sunflower oil in a pan over medium heat.

    Spread about 1 heaped tbsp of batter in the pan to form a circle roughly 10 cm wide.

    Cook pancakes for about 5 minutes until golden brown, flipping once.

    Drain pancakes on kitchen paper.

  11. 11.

    Keep covered and warm in an oven at 70°C.

  12. 12.

    For serving place a small piece of butter between each pancake (melting between hot layers), stack as desired, add more butter on top and drizzle maple syrup over the stack.
