Ingredients

  • 200 ml milk
  • 2 Eggs
  • Salt
  • 150 g flour
  • 400 g sauerkraut (canned)
  • 100 g dry white wine
  • 100 g Red Grapes
  • pinch sugar
  • pepper (ground)
  • Vegetable oil for frying
  • 1 Red Onion

Instructions

    For the batter, whisk together the milk, eggs, ½ tsp salt and flour until a thick pancake batter forms. Add more or less milk if needed. Let the batter rest for 30 minutes.

    Drain the sauerkraut well and simmer it with the white wine over low heat, covered, for about 20 minutes. Wash the grapes, halve them, and add to the kraut. Season with sugar, salt and pepper, then set aside.

    In a hot pan, fry each pancake until golden brown on both sides.

    Peel the onion, slice into rings, and sauté in 1 tbsp hot oil until translucent; season with salt and pepper. Fill each pancake with the sauerkraut mixture, roll up, halve, and arrange three pieces per plate. Garnish with the onions.
