Ingredients
- 250 g mixed mushrooms (e.g., enoki and oyster)
- 1 Garlic clove
- 1 tbsp freshly grated ginger
- 1 pak choi (about 500 g)
- 750 ml vegetable broth
- 2 tbsp sesame oil
- 2 Eggs
- soy sauce
- Salt
- hoisin sauce

Clean the mushrooms and slice the oysters. Peel and finely chop the garlic and ginger. Wash, trim, remove the tough stem of the pak choi and cut into strips. Sauté the oysters with garlic and ginger in 1 tbsp hot oil. Add the pak choi, then deglaze with broth. Let simmer gently for about 5 minutes.

Meanwhile whisk the eggs with 1 tbsp soy sauce and cook them in the remaining oil until set. Transfer to a cutting board, roughly chop, and add the enoki mushrooms to the soup. Let it rest briefly and season with soy sauce, salt, and hoisin sauce. Serve divided into bowls.
