Ingredients

  • 200 g broad green beans
  • 800 g rabbit cut into small pieces (with bones)
  • 1 Garlic clove
  • 5 tbsp olive oil
  • 350 g paella rice
  • 1 tin saffron (0.1 g)
  • Salt
  • Pepper
  • 1 l meat broth
  • 3 large prawns
  • 3 scampi

Instructions

    Preheat the oven to 180°C with fan and top heat.

    Wash, trim, and cut the green beans into pieces. Rinse the rabbit and pat dry. Peel and finely chop the garlic.

    Sauté the rabbit in 2-3 tbsp oil in a hot paella pan for about 5 minutes until golden brown on all sides, then remove from the pan. Add the green beans with garlic to the pan, add 1-2 tbsp oil, and sauté for about 5 minutes. Return the meat with saffron and rice to the pan. Mix well, season with salt and pepper, and pour in the broth.

    Bake the paella in the oven for about 20 minutes until cooked through.

    Rinse the prawns and scampi, then add them during the last 5-10 minutes of baking to let them cook together.

    Taste when the rice is done, adjust seasoning, and serve.
