Oysters with Lemon

Ingredients

  • 24 fresh oysters (e.g., Sylter Royal)
  • 2 limes or lemons
  • clarified butter

Instructions

    Wash the oysters and open them: hold each oyster with the convex side down in a kitchen towel, use an oyster knife to puncture the hinge firmly at the back, then twist to open.

    Remove the upper muscle from the shell, discard the top shell, then cut the lower muscle from the shell, keeping as much of the oyster liquid in the bottom shell as possible.

    Clean any shell fragments off the oysters with a finger and serve on plates with clarified butter. Garnish with lemon wedges and graham crackers.
