Ingredients

  • 8 large starchy potatoes
  • 150 g crème fraîche
  • 1 tbsp Lemon Juice
  • salt (pepper)
  • 50 g caviar (or more)

Instructions

    Preheat the oven to 220°C. Wash and dry the potatoes with skin on, then place each potato on a piece of aluminum foil. Press the foil tightly over the potatoes. Place the wrapped potatoes on a baking tray; bake for about 50 minutes. Whisk the crème fraîche with lemon juice and season with salt and pepper.

    Remove the potatoes from the oven and open the foil. Cut crosswise into the potatoes, push them apart, and spoon a dollop of crème fraîche into each indentation. Top with caviar and serve.
