Oven-Baked Chili Con Carne

Ingredients
- 1 onion
- 1 Garlic clove
- 1 red chili pepper
- 2 red bell peppers
- 2 tbsp Rapeseed oil
- 600 g ground beef
- 1 tbsp Tomato Paste
- 600 ml Meat broth
- 250 g passata
- 1 tsp Sweet paprika powder
- 200 g kidney beans (canned)
- 200 g corn kernels (canned)
- Salt
- a pinch of brown sugar
- Pepper
- 5 sprigs coriander leaves
Instructions

Peel and finely dice the onion and garlic. Clean, wash, and finely dice the chili peppers. Wash the bell peppers, halve them, clean, and cut into pieces.

Heat oil in a pot, crumble the ground beef until browned. Add onions, garlic, and chili; cook together 1–2 minutes. Briefly sauté the bell peppers and tomato paste, then deglaze with broth. Add passata and paprika powder.

Rinse beans and corn in a sieve, drain well. Add them to the chili and season with salt, sugar, and pepper.

Transfer the chili con carne to a baking dish and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 1 hour. Add more broth if needed.

Wash and dry coriander leaves. Remove the chili from the oven and garnish with the coriander before serving.
