Ostrich Steak with Potatoes

Ingredients

  • 600 g firm potatoes (cooked the day before)
  • 6 tbsp rapeseed oil
  • 2 sprigs Rosemary
  • 2 Bay leaves
  • Salt
  • Pepper (freshly ground)
  • 4 ostrich steaks (about 150 g each)
  • 100 ml whipping cream

Instructions

    Preheat the oven to 70°C fan.

    Peel and halve the potatoes as desired. Heat 4 tbsp oil in a large heavy pan. Add the potatoes, then add the herbs, salt and pepper generously. Fry crisp for about 10 minutes, turning occasionally.

    Meanwhile, rinse the steaks and pat dry. In the remaining hot oil, sear both sides for about 5 minutes, remove and keep warm in the oven. Stir the cream into the pan juices and let reduce slightly. Season the sauce.
