Oshi-Sushi with Salmon

Ingredients

  • 400 g cooked sushi rice
  • 1 Noriblatt
  • 400 g fresh salmon fillet
  • 1 EL sesame oil (light)
  • 1 Spring onion
  • 1 lemon

Instructions

    Line a loaf pan (about 10x30 cm, or a baking frame, or an Oshi mold) with clear plastic wrap. Add about half of the rice and press it flat evenly. Cut the nori sheets to size and place them on top. Add the remaining rice and press down.

    Wash the salmon, pat dry, and sear one side in hot oil for 1-2 minutes. Remove, let cool, and place it on the rice with the unseared side facing up. Cover with clear plastic wrap and place a board or similar weight on top to compress. Chill in the refrigerator for about 45 minutes.

    Use only the green part of the spring onion. Wash it and slice into thin rings. Halve the lemon and cut very thin slices.

    Remove the Oshi sushi from the mold and cut into eight pieces with a sharp knife. Serve garnished with spring onions and lemon slices.
