Oranges in Syrup

Ingredients
- 1 kg firm oranges
- salt (for rubbing)
- 1 kg sugar
- 1.5 l water
- 2 tbsp lemon juice
Instructions

Thinly peel the orange skins, rub the fruits with salt and let them sit for 30 minutes.

Place the fruits in a bowl, pour boiling water over them. Once the water has cooled, remove the oranges, drain, rinse with cold water, and leave overnight in fresh water.

Score the bottom of each orange crosswise and boil the fruits in plenty of water until the skin is soft.

Remove the oranges, slice into rounds and discard the seeds.

For the syrup, dissolve sugar in water over low heat, add lemon juice, bring to a boil once.

Add the orange slices to the syrup and cook until they become translucent. The syrup should thicken; skim off any foam.

Fill hot glasses with the orange slices and syrup, seal tightly.
