Orange Wild Duck

- 4 wild duck breasts
- Salt
- Pepper (freshly ground)
- 4 tbsp orange liqueur
- 6 oranges (unprocessed)
- 2 tbsp orange marmalade
- 1 Tbsp clarified butter

Season the duck breasts with salt and pepper, then drizzle with 2 tbsp orange liqueur. Wash the oranges. Thinly peel the zest of one orange into very fine strips.

Squeeze juice from 4 oranges and heat it with the zest, remaining liqueur, and marmalade until reduced by half. Peel the remaining 2 oranges thoroughly with a knife, remove all white membranes, and cut fillets along the segments.

Heat clarified butter in a pan. Sear the duck breasts for 2 minutes on each side, then cook at low heat for another 3–4 minutes per side.

Bring the orange sauce to a boil and add the orange fillets. Slice the meat and serve with the sauce.
