Orange Cookies

Ingredients
- 250 g flour
- 80 g sugar
- 1 pinch salt
- 1 tsp orange zest
- 1 egg
- 160 g butter
- flour (for work surface)
- 200 g powdered sugar
- 2 tbsp Orange juice
- orange food coloring

Mix the flour with the sugar, salt and zest; sift onto a work surface, make a well in the center, crack the egg into it and scatter the butter in flakes around the well. Quickly knead with your hands into a smooth dough, shape into a ball and wrap in cling film for 30 minutes in the refrigerator.

Preheat the oven to 180°C (350°F) fan‑forced or conventional heat.

Knead the dough again on a floured surface, divide it into three portions, roll each into a 2 cm thick log, cut 1.5 cm thick slices and roll these into balls. Flatten the dough balls slightly, place them on a baking tray lined with parchment paper and bake in the preheated oven for 10–12 minutes.

Remove the freshly baked cookies from the oven, lift them off the tray with the parchment paper and let them cool.

Meanwhile whisk powdered sugar with orange juice and add food coloring as needed to make a thick glaze.

Brush the glaze over the cookies, stack four on top of each other and allow to dry.
