Orange Chutney

- 50 ml red wine vinegar
- 15 g fresh ginger
- 100 g Raw sugar
- 4 tbsp Campari
- 2 untreated oranges
- 2 shallots
- Salt
- Pepper

Remove the zest from the oranges, but avoid the bitter white pith. Slice the zest into very thin strips.

Next, peel the oranges to remove the white skin (using a sharp knife or by peeling) and cut the flesh from the separating membranes, catching the released juice and squeezing out any remaining orange pulp. Dice the extracted orange segments.

Peel the ginger and finely chop it. Peel the shallots and also finely mince them. Combine both with the orange juice, orange pieces, zest, sugar, vinegar, and Campari in a pot over low heat and simmer for about 30 minutes until thickened. Finally season with salt and pepper and serve the chutney warm or cold. It pairs especially well with poultry and game dishes.
