Onion Soup with Cheese Bread

Ingredients
- 700 g onions
- 2 tbsp sunflower oil
- 2 tsp sugar
- Salt
- ground pepper
- 800 ml beef broth
- 200 ml dry white wine
- 2 Garlic cloves
- 1 tsp lemon juice
- 4 slices baguette
- 100 g freshly grated Gruyère cheese

Peel the onions and slice them into thin rings. Heat the oil in a pot and slowly sauté the onions for about 10–15 minutes, stirring occasionally, until they soften. Season with sugar, salt, and pepper, then simmer for another 10 minutes, stirring occasionally, until golden brown.

Add the broth and wine to the pot, bring to a boil, and let it simmer for about 15 more minutes. Peel the garlic cloves and press them into the soup, seasoning with lemon juice, salt, and pepper to taste.

Preheat the oven to 240°C (grill setting).

Transfer the onion soup into four heat‑proof bowls. Place one slice of baguette on top of each bowl and sprinkle the grated Gruyère cheese over it. Bake in the preheated oven for about 5 minutes until the cheese melts, then serve immediately with freshly ground pepper.
