Omelette with Spinach and Parma Ham

- 1 kg fresh spinach leaves
- 4 Spring Onions
- 2 Garlic cloves
- 4 tbsp olive oil
- Salt
- freshly ground pepper
- 8 eggs
- Salt

- 1 bunch dill
- 100 g Parma ham

Clean, trim and wash the spinach thoroughly. Use only the thick roots of the spring onions, peel them and cut in half. Peel the garlic and slice it thinly.

Heat the olive oil. Sauté the garlic and spring onions for 5 minutes. Add the spinach until it is just wilted, cover and steam for 8-10 minutes. Season with salt and pepper.

Beat the eggs with salt and pepper. In a non-stick pan, melt butter in 1 tbsp portions. Pour ¼ of the beaten eggs into the pan and let set. Repeat to make three more omelettes in the same way.

Rinse the dill, shake off excess water and finely chop it. Sprinkle over the omelettes. Arrange the spinach with the omelettes and Parma ham on a plate.
