Ingredients

  • 1 untreated lemon
  • 150 g black olives (pitted)
  • 150 g green olives (pitted)
  • 2 Garlic cloves
  • 2 Handfuls Basil
  • 2 anchovy fillets
  • 1 tsp liquid honey
  • 50 ml olive oil
  • 1 tbsp coarse mustard
  • Salt
  • ground pepper

Instructions

    Wash the lemon hot, dry rub it, zest the peel and then squeeze out the juice. Set aside some for garnish and put the rest in a blender. Drain the olives well. Peel the garlic cloves. Rinse the basil, shake dry and pluck the leaves. Reserve some leaves for garnish. Pat the anchovies dry and add them with the basil, garlic and olives to the lemon zest. Drizzle a little lemon juice (about 1 tbsp) and honey and blend finely. While blending, gradually pour in the oil until a creamy paste forms. Stir in the mustard and season with salt, lemon juice and pepper.

    Serve on small bowls and garnish with lemon zest and basil leaves. Offer bread as desired.
