Olive Cake

Ingredients
- dried white bread crumbs
- 200 g cooked rice (from the day before)
- 3 dried chili peppers (crushed)
- 4 tbsp grated Parmesan
- 2 finely chopped garlic cloves
- 3 eggs
- 2 tbsp finely chopped rosemary needles
- olive oil
- Salt
- ground pepper
- olive paste

Knead cooked rice, chili, rosemary, Parmesan, garlic, eggs, salt, pepper and 300 g bread crumbs into a smooth dough. Let it rest for 10 minutes. If the mixture is too firm, knead with a little water until soft. If it’s too liquid, add more bread crumbs.

Preheat the oven to 200°C. Grease a loaf pan with 2 tbsp olive oil. Divide the dough into thirds. Line the bottom of the pan with a 2 cm thick layer of dough (roll out the dough on cling film if needed). Spread generous amounts of olive paste over it. Place another sheet of dough on top, spread more olive paste, and finish with a final dough layer. Brush the surface with olive oil and bake in the hot oven for 35 minutes until golden brown. Remove from the pan, slice, and serve warm.
