Ingredients

  • 300 ml olive oil
  • 2 star anise
  • 2 tbsp fennel seeds
  • 1 tsp anise seeds
  • 2 cloves garlic
  • 2 cinnamon stick pieces
  • 1 piece untreated lemon zest
  • 1 piece untreated orange zest

Instructions

    Step 1: Warm about 50 ml of olive oil.

    Step 2, 3 and 4: Add the star anise, cinnamon sticks, fennel and anise to the oil.

    Step 5: Peel the garlic, cut into large pieces and add it to the oil as well.

    Step 6: Finally add the citrus zests and let the mixture steep on a turned-off stove for about 10 minutes.

    Step 7: Pour the infused oil into a prepared bottle.

    Step 8: Top up with the remaining cold olive oil.

    Step 9: Let the oil cool and darken for about 2 days before using, then strain through a sieve if desired.
