Nut Waffles with Honey
Nut waffles made with whole‑grain flour and nuts become a brain food because they contain plenty of B vitamins.
Ingredients
- 100 g oranges (0.5 oranges)
- 50 g margarine (2 Tbsp)
- 1 tbsp honey
- ½ packet vanilla sugar
- 1 egg
- 45 g whole‑grain flour (3 Tbsp)
- 30 g ground hazelnuts (3 Tbsp)
- 1 tsp Baking powder
- ½ Tbsp oil (e.g., rapeseed oil)

Instructions

Squeeze half an orange and measure 75 ml of juice.

Add margarine, honey, and vanilla sugar to a bowl. Whisk with a hand mixer until creamy.

Separate the egg. Beat the yolk into the margarine‑honey mixture.

In a small bowl mix flour, hazelnuts, and baking powder; add to the yolk mixture and stir in the orange juice gradually until a thick batter forms.

Place the egg white in a tall container and beat with the mixer’s whisk until stiff peaks form. Gently fold the meringue into the batter.

Preheat a waffle iron and lightly oil the plates. Pour 2 Tbsp of batter onto the center, close the lid, and bake for about 4 minutes until golden brown. Repeat with the remaining batter to make three more waffles. Sprinkle powdered sugar before serving if desired.
