Ingredients

  • butter (for the pan)
  • flour (for the pan)
  • 150 g soft butter
  • 150 g sugar
  • 0.5 tsp lemon zest (unprocessed)
  • 0.5 tsp orange zest (unprocessed)
  • 1 vanilla pod (aroma)
  • 3 eggs
  • 350 g flour
  • 2 tsp Baking powder
  • 250 g ground walnuts
  • 50 ml milk
  • 400 g cream cheese
  • 2 tbsp coffee (freshly brewed and cooled)
  • 150 g powdered sugar
  • 15 walnut halves

Instructions

    Preheat the oven to 180°C fan. Grease the pan and dust with flour.

    Cut the butter into pieces and beat with a hand mixer until fluffy, then gradually add the sugar, mixing well. Add the lemon and orange zest and vanilla aroma. Beat in the eggs one at a time, stirring after each addition. Mix the flour, baking powder, and walnuts together, then alternate adding this dry mix and milk to the egg mixture. If the batter is too thick, add a little more milk. Pour into the greased pan and bake on the middle rack for 40‑50 minutes; test with a skewer. After baking, let the cake cool in the pan, then remove once fully cooled.

    For decoration spread the cream cheese all around the cake. Whisk the coffee with powdered sugar to make a thick glaze, pour over the cream cheese topping, and decorate with walnut halves. Slice and serve.
