Nougat Cookies with Nuts

Ingredients
- 200 g Flour
- 100 g light nougat
- 50 g powdered sugar
- 150 g ground hazelnuts
- 1 tsp cinnamon
- a pinch of ground cloves
- 150 g butter
- 20 ml rum
- 1 egg (beaten)
- flour (for the work surface)
- 250 g dark chocolate couverture (at least 60% cocoa)
- 120 g white chocolate couverture

Cut the nougat into small pieces. Mix flour, powdered sugar, nuts, cinnamon and cloves; place on a work surface and make a well in the center. Add butter pieces, rum, beaten egg and nougat pieces to the well, crumble everything with a dough scraper and quickly knead by hand into a shortcrust dough. Wrap in foil and chill for 30 minutes. Preheat the oven to 180 °C (top/bottom heat).

Roll out the dough on a lightly floured surface to 1 cm thickness, cut out circles (4‑5 cm diameter) and place side by side on a baking sheet lined with parchment paper. Bake in the preheated oven (middle rack) for about 12‑15 minutes. Remove and cool on a wire rack. Melt the dark chocolate over a double boiler and dip half of each cookie. Place on foil and let dry. Melt the white chocolate over a double boiler, transfer to a piping bag with a star tip, and pipe a zig‑zag line onto each cookie.
