Noodle Vegetable Soup

The noodle vegetable soup by Spoonsparrow is perfect when you need to move quickly. A tasty dinner for the whole family!

Ingredients

  • 1 onion
  • 1 Garlic clove
  • 2 tbsp butter
  • 1.5 l vegetable broth
  • 2 carrots
  • 250 g whole‑grain pasta noodles
  • 200 g zucchini
  • 3 stalks chives
  • Salt
  • pepper (ground)
  • nutmeg

Instructions

    Peel and finely dice the onion and garlic, then sauté them in a hot pot with butter until translucent; add the vegetable broth and bring to a boil.

    Wash, peel, and julienne the carrots, adding them to the broth. Sprinkle in the noodles and simmer for 5 minutes.

    Meanwhile, clean, wash, and julienne the zucchini, adding it to the soup and letting it cook on low heat for about 4 more minutes.

    Wash the chives, shake off excess water, and cut into small rings. Season the soup with salt, pepper, and nutmeg; taste and adjust seasoning. Plate the soup and garnish with chopped chives before serving.
