Noodle Potato Egg Skillet

The delicious and healthy noodle-potato-egg skillet from Spoonsparrow is one you shouldn't miss!

Ingredients

  • 300 g whole wheat noodles
  • Salt
  • 600 g small pre-cooked boiled potatoes (from the day before)
  • 2 Zucchini
  • 1 onion
  • 80 g smoked salmon
  • 3 tbsp Rapeseed oil
  • Pepper
  • 4 eggs
  • 20 g chives (1 bunch)

Instructions

    Cook the noodles according to package instructions in plenty of boiling salted water until al dente, drain in a sieve and let drain well.

    In the meantime, peel the boiled potatoes as desired and cut them into thin slices. Clean, wash and slice the zucchini. Peel and chop the onion. Cut the smoked salmon into small cubes.

    Heat the oil in a large pan. Add the potato slices and fry for about 5-7 minutes over medium heat.

    Add the onion and ham cubes as well as the zucchini slices and continue frying for about 5 minutes. Then season with salt and pepper. Add the noodles and stir in.

    Crack the eggs and add them to the pan as fried eggs, season with salt and pepper and let set for about 3-4 minutes.

    In the meantime, wash the chives, shake them dry, cut them into rolls and sprinkle them over the noodle-potato-egg skillet.
