Ingredients

  • 2 yellow bell peppers
  • 100 g black olives (pitted)
  • 1 onion
  • 4 tomatoes
  • lettuce leaves (as desired)
  • 300 g green beans
  • 10 anchovies
  • 2 boiled eggs
  • Salt
  • Pepper (freshly ground)
  • 5 tbsp olive oil
  • 3 tbsp white wine vinegar
  • 1 tbsp Lemon Juice
  • basil (for garnish)

Instructions

  1. 1.

    Wash the peppers, halve them, remove seeds and cut into strips.

    Peel the onion and slice it thinly into rings.

  3. 3.

    Wash the tomatoes, trim the stem end and cut into wedges.

  4. 4.

    Wash the lettuce leaves, clean them, drain and arrange on a plate.

  5. 5.

    Wash the beans, trim them and blanch in boiling salted water for about 4 minutes. Shock, drain and cut diagonally into pieces.

    Peel the eggs and cut them into halves.

  7. 7.

    Arrange peppers, olives, tomatoes and beans on the lettuce leaves. Top with onion rings, egg halves and anchovies.

  8. 8.

    Whisk vinegar, lemon juice and olive oil together, season with salt and pepper and drizzle over the salad. Serve garnished with basil.
