Nectarines with Vanilla Ice Cream

Ingredients
- 4 nectarine
- 0.5 l milk
- 0.25 L whipping cream
- 1 Vanilla bean
- 7 egg yolks
- 200 g sugar

Wash, dry, halve, and pit the nectarines. Grill them on the cut side, let cool slightly, and place on plates. Add one scoop of ice cream to each stone cavity and serve.

Slice the vanilla bean lengthwise, scrape out the seeds, and stir the bean with the milk-cream mixture until it boils.

Whisk the egg yolks with sugar in a bowl until creamy.

Pour the hot milk in a thin stream into the yolk mixture, then return everything to the pot. Remove the vanilla bean and stir over low heat with a wooden spatula until the custard thickens; it must never boil.

Let the vanilla custard cool on ice water, stirring occasionally.

Transfer the cold custard to an ice cream maker and churn until ready.
