Ingredients
- 4 thin veal cutlets
- 2 tbsp flour
- 4 tbsp butter
- 1 lemon
- 4 tomatoes
- 2 stalks leeks
- 200 g small mushrooms
- 2 tbsp butter
- 2 sprigs thyme
- Salt
- Pepper
- 1 untreated lemon

Wash the tomatoes and quarter them. Clean and halve the mushrooms. Heat butter, sauté the mushrooms until the liquid evaporates. Clean, wash, and slice the leeks diagonally; add to the tomatoes. Cook for 5 minutes more, seasoning with salt and pepper.

Rinse the meat, pat dry, season with salt and pepper, then coat in flour. Heat butter and fry the meat for 3 minutes on each side; remove and deglaze the pan with lemon juice. Arrange the schnitzel with the vegetables on plates. Peel the untreated lemon thickly, slice it, and garnish the schnitzels. Decorate with thyme leaves.
