Mushrooms with Crab Salad Filling

Ingredients

  • 12 mushrooms
  • 1 clove garlic
  • 2 tbsp parsley
  • 300 g crab meat (canned)
  • 2 beef tomatoes
  • 2 Spring Onions
  • Salt
  • pepper (from grinder)
  • 3 tbsp Lemon juice
  • 2 tbsp sprout oil
  • lemon zest strips for garnish

Instructions

    Clean the mushrooms. Carefully detach the stems, finely chop them and place in a bowl. Crush the garlic clove and add it to the bowl.

    Cut the crab meat into small pieces and mix with the parsley in the bowl.

    Briefly blanch the tomatoes, peel, quarter, seed and finely chop them. Wash, trim and slice the spring onions into thin rings; add them with the tomatoes to the bowl. Add lemon juice and oil, season with salt and pepper, mix well, fill the mushroom caps with the mixture, garnish with lemon zest strips and serve with toast.
