Mushroom Tomato Ragout

Ingredients
- 1 can peeled tomatoes (ca. 450 g)
- 1 onion
- 2 Garlic cloves
- 3 tbsp olive oil
- 2 tbsp Tomato paste
- 2 Bay leaves
- 400 g Mushrooms
- Salt
- Pepper (freshly ground)
- 2 tbsp parsley
Instructions

Peel and dice the onion; peel and mince the garlic. Sauté both in hot oil in a wide pot until translucent, stir in tomato paste, add bay leaves and tomatoes with juice.

Break the tomatoes into pieces with a knife, season with salt and pepper, and simmer for 10 minutes. Clean the mushrooms and add them after the 10 minutes, cooking everything another 10 minutes. Taste and serve sprinkled with parsley.
