Minced Meat Skewers with Garlic Sauce

Ingredients
- 200 g shallots
- 400 g zucchini
- 0.5 stale roll
- 0.5 medium sharp mustard
- Salt
- Pepper
- 250 g beef tartare
- 1 bunch flat-leaf parsley
- 2 tbsp oil
- 1 egg yolk
- 1 tsp lemon juice
- 1 tbsp vinegar
- Salt
- 0.125 l olive oil
- 4 whole milk yoghurts
- 4 Garlic cloves
- Salt
- Pepper
- grated lemon zest
Instructions

Peel the shallots and slice the washed zucchini into 1 cm thick rounds. Soak the roll in lukewarm water, then squeeze out excess moisture.

Add mustard to the minced meat and mix into a dough. Season with salt and pepper, then fold in half of the chopped parsley.

Shape the meat mixture into 12–16 small balls and skewer them alternately with shallots, zucchini slices, and parsley leaves on four sticks.

Heat oil in a pan, brown the skewers all around, cover and cook for 5–10 minutes more.

Whisk egg yolk, lemon juice, vinegar, and salt until frothy; gradually drizzle in olive oil, then stir in yogurt and pressed garlic cloves until smooth.

Sprinkle with grated lemon zest and serve the skewers on a plate.

Accompany with baguette or country bread.
