Melon Salad with Pistachios

Ingredients

  • 1 kg small watermelon (1 small watermelon)
  • 60 g dates (6 dates)
  • 1 Lime
  • 2 tbsp agave syrup
  • 40 g chopped pistachio nuts
  • 4 sprigs Mint

Instructions

    Halve the watermelon and use a Parisienne cutter to scoop out small balls. Pit the dates and cut them into pieces. Squeeze the lime. Mix the dates with the lime juice and agave syrup, then fold into the melon balls. Let chill in the refrigerator for about 20 minutes.

    Wash the mint, shake off excess water, and pluck the leaves. Distribute the salad onto bowls, sprinkle with pistachios, and serve garnished with mint.
