Mediterranean Pork Roast

Ingredients

  • 80 ml olive oil
  • 3 tbsp olive oil
  • limes
  • 1 tbsp mustard
  • 6 tbsp herbs de Provence
  • Salt
  • Pepper (freshly ground)
  • 4 Garlic cloves
  • 1.2 kg pork neck
  • 1 kg potatoes
  • 250 g tomatoes
  • 200 g mushrooms
  • 250 g zucchini
  • 2 onions

Instructions

    Mix 80 ml oil, lime juice, mustard, herbs, salt and pepper. Peel the garlic and press it in. Rub the meat with this mixture, place it in a freezer bag and refrigerate overnight.

    Drain the meat, put it in a larger roasting pan and bake at 200°C (bottom heating) for about 1 hour 30 minutes. Keep the remaining marinade.

    Meanwhile peel and quarter the potatoes. Peel and dice the onions. Mix both with the marinade. After 45 minutes of cooking add them to the meat and finish cooking everything together.

    Wash and cube the tomatoes. Clean and slice the mushrooms. Wash, clean and dice the zucchini. Heat the remaining oil in a large pan, sauté the vegetables over medium heat for about 15 minutes, season with salt and pepper. Slice the cooked pork and serve it with the pan‑vegetables and potatoes.
