Meatballs with Asian Noodles and Green Beans

Ingredients

  • 20 g ginger (1 piece)
  • 2 cloves garlic
  • 500 g ground beef
  • 30 g fine oatmeal (2 tbsp)
  • Salt
  • Pepper
  • 40 g light sesame (3 tbsp)
  • 600 g green beans
  • 2 green chili peppers (e.g., jalapeños)
  • 350 g Chinese egg noodles
  • 15 g ghee (clarified butter; 1 tbsp)
  • 2 tbsp sesame oil
  • 4 tbsp soy sauce
  • 10 g coriander (0.5 bunch)

Instructions

    Peel and chop ginger and garlic. Mix ground beef with ginger, garlic, and oatmeal. Season with salt and pepper. Form the mixture into about 20–24 small balls and roll them in sesame seeds.

    Trim and wash green beans. Wash chili peppers, slice into rings, and remove seeds.

    Cook noodles according to package instructions in plenty of boiling salted water until al dente. Drain and set aside.

    Heat ghee in a pan. Brown the meatballs over medium heat in two batches for about 10 minutes, turning them until golden brown on all sides.

    Meanwhile, heat sesame oil in a large pan or wok. Stir-fry beans and chilies for 3–4 minutes over medium heat. Add noodles, stir, then steam for another 2–3 minutes and finish with soy sauce.

    Wash coriander, pat dry, and tear leaves. Arrange noodles on plates, top with meatballs, and garnish with coriander.
