Ingredients

  • 1 red chili pepper
  • 1.5 cm fresh ginger
  • 1 Garlic clove
  • 1 Shallot
  • sesame oil
  • 600 g ground beef
  • 1 egg
  • 1 tbsp freshly chopped cilantro
  • 4 Tbsp breadcrumbs
  • Salt
  • black pepper (freshly ground)
  • 30 Kaffir lime leaves

Instructions

    Wash the chili, cut it lengthwise, deseed and finely chop. Peel and finely chop the ginger, garlic, and shallot. In a hot pan with 1 tbsp oil, quickly sauté the shallot with the garlic, ginger, and chili; remove from heat and let cool.

    Combine the ground beef with the egg, the shallot mixture, cilantro, and breadcrumbs into a firm dough; season with salt and pepper.

    Shape small patties from the meat mixture and wrap each patty in a lime leaf. Secure with a toothpick and brown all sides in a hot pan with oil. Reduce heat and let the meatballs finish cooking.
