Meat Fondue with Chutney and Peanut Sauce

Ingredients

  • 400g turkey breast and sirloin steak (each)
  • 1 Lime
  • ground chili pepper to taste
  • 2 tbsp semi-dry sherry
  • 1 tbsp soy sauce
  • 500g chicken wings
  • 4 tbsp peanut butter
  • 100ml clear instant chicken broth
  • 1 Garlic clove
  • 2 stalks spring onions
  • 2 tbsp red chili sauce
  • a few salad leaves, lime wedges and chili peppers (for serving)
  • 140ml mango chutney
  • 1kg frying oil

Instructions

    Cut the turkey breast and sirloin steak into bite-sized pieces. Wash the lime hot water and dry it; grate its zest finely. Squeeze out the juice. Mix the lime zest and juice, chili, sherry and soy sauce together, then combine with the diced meat and halved chicken wings. Let sit covered for 30 minutes.

    Whisk peanut cream with lukewarm chicken broth. Finely chop garlic and spring onions; stir both into the peanut sauce along with the chili sauce. Pat the meat dry with kitchen paper.

    Arrange on plates with salad leaves, lime wedges and chili peppers decoratively. Place peanut sauce and mango chutney in small bowls. Heat oil on the stove in a pot, pour it into a fondue pot, and set it on a burner.
