Ingredients

  • 300 g flour
  • 1 egg
  • 0.5 tsp Salt
  • 300 g ground meat
  • 1 onion
  • 1 Garlic clove
  • 20 g butter
  • 2 yolks
  • 1 egg
  • 2 tbsp chopped parsley
  • 60 g grated Parmesan
  • Salt
  • black pepper (ground)

Instructions

    Sift the flour onto a work surface, create a well in the center, add the eggs and salt, beat the eggs, then mix everything with the flour. Combine flour, eggs, and 3–4 tbsp water, starting from the middle and working outward until an elastic dough forms. Cover with a kitchen towel and let rest for 15 minutes.

    Process the ground meat in a food processor. Peel and dice the onion and garlic into small cubes.

    Heat butter in a pan and sauté the onion and garlic cubes until translucent. Mix in the processed meat.

    Stir in the yolks, egg, parsley, and Parmesan; season with salt and pepper. Let the mixture rest for at least 30 minutes to develop flavor.

    Roll out the dough thinly and cut into approximately 5 cm squares or use a ravioli cutter.

    Place a small amount of filling on half of the dough squares, leaving an edge. Cover with the other half and press firmly to seal. Bring salted water to a boil and cook the ravioli in batches for about 5 minutes. Remove with a slotted spoon and drain well. Serve hot on plates.
