Mashed Potatoes with Vegetables

Spoonsparrow's mashed potatoes with vegetables are ready in just 20 minutes – then the oven does the work.

Ingredients

  • 800 g potatoes (8 potatoes)
  • Salt
  • 150 g cherry tomatoes
  • 2 Beetroot
  • 2 Spring Onions
  • 100 g Gouda (45% fat content)
  • 2 tbsp olive oil

Instructions

    Wash the potatoes and cook them in boiling salted water for 20 minutes until tender. Then drain, shock in cold water, and let them drip dry.

    Meanwhile, wash the tomatoes and slice them. Peel the beetroot and slice it thinly. Clean, wash, and chop the spring onions into small rings. Grate the Gouda.

    Arrange the potatoes on a baking sheet lined with parchment paper and mash each potato into slices about 1 cm thick with a potato masher. Brush the potato slices with oil. Place tomato and beetroot slices on top and sprinkle with spring onions and Gouda. Bake the mashed potatoes with vegetables in a preheated oven at 200 °C (180 °C fan; Gas: Mark 3) for about 25 minutes.
