Ingredients

  • 600 g waxy potatoes
  • 1 cucumber
  • 1 Shallot
  • 4 tbsp olive oil
  • 100 ml milk
  • 1 handful sorrel
  • 4 smoked trout fillets about 120 g each (skin removed)
  • sorrel for garnish

Instructions

    Wash the potatoes and steam them until cooked, about 30 minutes.

    Peel the cucumber, trim the ends, cut it lengthwise in half, deseed, and slice. Peel the shallot and dice finely. Sauté together with the cucumber in 2 tbsp hot oil for 2-3 minutes until colorless. Remove from heat and let stand.

    Peel the potatoes and mash them roughly. Mix in the remaining oil, hot milk, and cucumber mixture. Rinse the sorrel, pat dry, remove stems, and cut leaves into strips. Fold into the mash and season with salt and pepper.

    Distribute onto plates, place a trout fillet on each, and lightly pepper.
