Ingredients

  • 50 g marzipan base
  • 125 g flour
  • 30 g powdered sugar
  • 1 packet vanilla sugar
  • 1 pinch salt
  • 1 tsp saffron powder
  • 60 g cold butter
  • 1 Egg white
  • flour (for work surface)
  • 100 g dark chocolate couverture
  • 125 g powdered sugar
  • Lemon juice

Instructions

    Preheat the oven to 175 °C with upper/lower heat. Chop the marzipan. Sift the flour onto a working surface. Create a well and add powdered sugar, vanilla sugar, salt, saffron, chopped marzipan, diced cold butter, and egg white. Knead from the center until a smooth dough forms. Wrap in cling film and chill for at least 1 hour.

    Roll the dough on a lightly floured surface into a strand about 3 cm thick and cut into 1 cm pieces. Roll each piece into a ball, flatten slightly, and place on parchment paper on a baking sheet. Bake in the preheated oven for 12–15 minutes until golden yellow. Remove and cool on a wire rack.

    Coarsely chop the couverture and melt over a hot, non‑boiling water bath off the heat. Let it cool slightly. Mix powdered sugar with enough lemon juice to create a thick glaze. Place both the melted chocolate and the glaze in separate freezer bags, cut a small corner, and spray onto the cookies. Serve well dried.
